Hi Babes- I have a super quick/easy breakfast recipe for you today.
C O C O N U T PANCAKES.
Yes, they are so dreamy! I don't know what prompted me to make them one day, but ever since then, I haven't gone back. Not saying I won't, just saying I havent...as of yet.
Anywho, This recipe is SUPER simple.
p.s. feel free to eat them at any point of the day. Breakfast has no time limit-just saying.
- Just add water Pancake Mix (brand of your choosing)
- Sweetened Coconut Flakes
- Vanilla Almond Milk (Substitute Coconut Milk)
- Butter (for frying, obviously)
What do you do with these ingredients, you ask?
Well in all its complicated glory, follow the directions for quantity on the pancake mix box and instead of adding water to mix, add in your almond milk or coconut water.
- Toss in a few coconut flakes; I add maybe 1/4 a cup but feel freeeee to add more.
Mix it all together and voila!
Obvs, you have to cook the prepped mix, and that’s where the butter comes in. I LIKE….like, really like a lot of butter when I cook my pancakes. #CrackerBarrelTaughtMe.
